BANANA BREAD
Ingredients
8 T. (1/4 lb.) Butter, plus some for greasing the pan
1 ½ C. All purpose Flour
½ C. Whole Wheat Flour
1 t. Salt
1 ½ t. Baking Powder
3/4 C. Sugar
2 Eggs
3 very ripe Bananas, mashed with a fork until smooth
1 t. Vanilla Extract
½ C. chopped Walnuts or Pecans
½ C. Grated Dried Unsweetened Coconut
Procedure
Preheat the oven to 350. Grease a 9"x5" loaf pan with Butter
Mix together the flour, Salt, and Baking Powder
Whip the Butter until soft and light, and beat in the Eggs and Bananas
Stir the Banana mixture into the Flour Mixture. Do not over mix
Gently stir in the Vanilla, nuts and Coconut
Pour Batter into pan and bake 45-60 minutes.
