BLACK BEAN SOUP
(Makes 8 servings)

Ingredients 
16 ounces cooked ham sliced thin 
2 tablespoons canola oil 
2 small red onions finely chopped 
1 jalapeno chili finely chopped 
6 garlic cloves chopped 
1 teaspoon cumin 
1 teaspoon dried oregano 
5 cans black beans drained and rinsed 
1 cup cilantro chopped

Procedure 
1. Cook ham in large stock pot with oil until golden brown. 
2. Add onions, chili, garlic, cumin and oregano and stir until garlic is tender 1-2 minutes. 
3. Add beans and 6 cups water and simmer for 10 minutes. 
4. Stir in cilantro. 
5. Remove from heat. 
6. Puree soup with blender.
