MEAT AND BEAN BURRITOS
Ingredients
The Beans :1/4 C. Oil
½ C. Onion, chopped
2 t. (or more) Ground Cumin
2 C. Drained Kidney or other Red Beans
Salt and Pepper
1/4 t. Cayenne
Procedure
Over medium heat, place the Oil. Add the Onions and cook, stirring, until golden brown-about 10 minutes.
Add the Cumin and cook, stirring, 1 minute more. Add the beans and mash them with a large fork or potato masher. Continue to cook and mash, stirring until the beans are more or less broken up. Season with the Salt and Pepper, and the Cayenne
The Burritos
Ingredients
3/4 to 1 lb. Ground Meat or Poultry
½ C. Chopped Onion
1 T. Minced Garlic
1 T. Chili Powder, or to taste
2 C. of the Beans from recipe above
Salt and Pepper
Flour Tortillas
1 ½ to 2 C. Grated Cheddar or Jack Cheese
2 C. Chopped Lettuce or Greens
Any Salsa of your liking
Minced Cilantro leaves
Procedure
In a large skillet over medium heat, cook the meat, stirring frequently, until it starts to lose its color. Stir in the Onion, and continue to cook until the meat is all browned and the lumps are all broken up. Stir in the Garlic and Chili Powder, and cook 1 minute longer.
Add the Beans and cook, stirring, until they are hot. Taste for Salt, pepper, and Chili Powder.
Spread a portion of Cheese onto each Tortilla and top with a portion of the Meat and Bean mixture, followed by the Lettuce, Salsa, and Cilantro.
Roll up and Serve.
