BUTTERMILK BISCUITS

Ingredients 
2 C. All Purpose Flour 
1 t. Salt 
3 t. Baking Powder 
1 t. Baking Soda 
2 to 5 T. cold Butter (more is better) 
7/8 C. Buttermilk

Procedure 
1. Preheat the oven to 450 
2. Mix together the Flour, Salt, Baking Powder, and Baking Soda 
3. Cut the Butter into small bits and cut them into the dry ingredients Use a large spoon to stir in the Buttermilk, just until the mixture forms a ball. Turn the dough out onto a lightly floured surface and knead it ten times-no more 
4. Press the dough into a 3/4-inch thick rectangle and cut into 2" rounds 
5. Place the rounds on an ungreased cookie sheet. Gently reshape the leftover dough and cut again
6. Bake 7 to 9 minutes, or until golden brown
