SIMPLE BUTTERCREAM
Ingredients
4 Eggs
1 C. Sugar
1 lb. Butter, room temperature
ct. Salt
Procedure
1. Place the Eggs and Sugar in mixing bowl. Place this over a double boiler. Whisk frequently, and warm to 160.
2. Beat on medium speed until the mixture is very light-colored, very airy, and completely cooled (about 5 minutes). Add the Butter, a couple of tablespoons at a time.
3. To finish, add the Salt, and beat on high speed for 1 minute
