CARROT COLE SLAW
(Makes 8 servings)
Ingredients
½ head green cabbage shredded
5 shredded carrots
½ cup canola oil
5 tablespoons limejuice
2 tablespoons cilantro
1 teaspoon ground cumin
Salt and pepper to taste
½ cup plain yogurt
Procedure
1. Shred cabbage and carrots in a large bowl.
2. Combine lime juice, oil, salt, pepper, chopped cilantro, ground cumin and plain yogurt and whisk until completely smooth.
3. Pour mixture over cabbage and carrots and stir until coated evenly.
