CRANBERRY ORANGE MUFFINS

Ingredients 
3T. Butter, Softened 
1/2 C. Sugar 
1 Egg 
1 C. Milk 
1 C. Sundried Cranberries 
1 T. Orange Zest 
1 t. Ground Cinnamon 
2 C. All Purpose Flour 
1 T. Baking Powder 
1/2 t. Salt

Procedure 
1. Preheat Oven to 400. Line Muffin Tins with Paper Liners (12) 
2. Mix together the Flour, Sugar Salt, Cinnamon and Baking Powder 
3. In another bowl, Beat together the Egg, Milk, and Butter 
4. Make a well in the center of the dry ingredients and pour the wet ingredients into this. Using a wooden spoon, combine the ingredients swiftly, stopping as soon as the dry ingredients are moistened. The batter should be lumpy. Stir in Cranberries, Orange 
5. Fill muffin tins 2/3 full. Bake 20-30 minutes 
6. The muffins are done when browned on top and a toothpick inserted into the center comes out clean
