EMPANADAS
(Makes 8 servings)
Ingredients for dough
6 cups all purpose flour
3 teaspoons baking powder
3 teaspoons salt
1 ½ sticks butter
1 ½ cups cold water
2 large eggs for egg wash
Ingredients for filling
2 pounds ground beef
2 medium onions finely diced
1 teaspoon chili powder
2 cans diced tomatoes
1 cup chopped cilantro
Salt and pepper to taste
Procedure for dough
1. In
mixing bowl combine flour, baking powder and salt.
2. Cut
butter in until mixture is crumbly
3. Add
just enough water so dough comes together and chill the dough.
Procedure for filling
1. In
skillet cook meat until no longer pink
2. Add
onions and diced tomatoes to meat and cook until soft.
3.Stir
in chili powder and chopped cilantro
Procedure to form empanadas
1. Roll out dough and cut into 4 inch rounds
using cutter.
2. Fill empanada with 2 tablespoons filling.
3. in
half and seal with egg wash.
4. Press fork into edge to make a crimped border
and egg wash empanadas.
5. Bake at 350 degrees for 20 minutes until
empanadas are golden brown.
