GINGER CARROT BREAD
(Makes one 8 ½ x 4 ½)
Ingredients
¾ cup sugar
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup carrot juice
1 ½ cups all purpose flour
¾ teaspoon ground ginger
2 teaspoon baking powder
½ teaspoon salt
Procedure
1. Lightly coat loaf pan with cooking spray.
2. In a large bowl whisk together sugar, oil, eggs, vanilla and carrot juice.
3. In a medium bowl combine dry ingredients, flour, ginger, baking powder and salt.
4. Add flour mixture to egg mixture mixing until just combined.
5. Pour batter into prepared pan and bake 30 minutes in 350 degree oven (or until skewers come out clean).
