GOAT CHEESE SALAD WITH VINAIGRETTE DRESSING
(Makes 8 servings)
Ingredients
1
oz. or 1-3 tbsp. olive oil for every 3 people
1
log goat cheese (4oz.), at room temperature
8
large basil leaves, cut into fine strips
pinch
of salt
½
tsp. chopped garlic (about 2 small cloves)
pinch
of Herbs de Provence, (according to taste)
Procedure
Mix
all ingredients together and add to goat cheese. Mix well.
Ingredients For Vinaigrette
½
cup olive oil
½
cup vegetable oil
1
tbsp. Dijon mustard
juice
of one lemon
2
tbsp. wine vinegar (or more to taste)
1
egg yolk (optional)
dash
of water (optional)
pinch
of salt
Procedure
1. In
a bowl, whisk together egg yolk, mustard, lemon juice, vinegar, and salt. Slowly whisk in vegetable oil, a dash of
water, and ½ cup of olive oil. (This can be kept in refrigerator for a maximum
of 2-3 days.)
2. Serve
with lettuce (and tomatoes and walnuts, if desired). One head of lettuce will be needed for 3-4
people. It is recommended to serve vinaigrette
on the side.
