LEMON FIG CAKE
(Makes 9 inch cake)
Ingredients
½ cup olive oil
½ cup milk
1 large egg
1 ½ cups all purpose flour
¾ cup sugar
½ teaspoon baking powder
¼ teaspoon salt
10 ounces dried figs – stemmed and coarsely chopped
1 ½ teaspoons finely grated lemon zest
Procedure
1. In a medium bowl combine oil, milk and egg.
2. In a large bowl whisk together flour, sugar, baking powder and salt.
3. Combine wet ingredients into dry and mix until just combined.
4. Gently fold in figs.
5. Spread batter into oiled 9 inch baking pan.
6. Bake for 30 minutes in 350 degree oven.
