LENTILS 
(Makes 8 servings)

Ingredients 
¾ cup lentils 
½ small onion chopped 
1 celery stalk 
1 small carrot 
2 1/2 cups water

Procedure 
1. Chop the onion into small pieces 
2. Combine lentils and water in a saucepan and bring to boil. 
3. Reduce heat and cover for 5 minutes 
4. Add onion and celery and cover and continue to cook until vegetables are tender, approximately 15-20 minutes
