CORNMEAL LOAF CAKE
(Makes one loaf cake)

Ingredients 
¾ cup butter unsalted 
1 cup sugar 
1 ¾ cup all purpose flour 
½ cup and 2 tablespoons yellow cornmeal 
1 tablespoon lemon zest 
1 fresh lemon juice 
1 ½ teaspoon baking powder 
1 teaspoon baking soda 
½ teaspoon salt 
3 large eggs 
¾ cup buttermilk

Procedure 
1. Cream butter and sugar until light and fluffy. 
2. Add eggs 1 at a time. 
3. Add in lemon zest. 
4. Combine all dry ingredients – flour, cornmeal,baking powder, baking soda and salt. 
5. Alternating with dry ingredients and buttermilk combine the 2 together and pour into a loaf pan. 
6. Baked for 40 minutes at 350 degrees.
