MEDITERRANEAN CHICKEN
(Makes 8 servings)

Ingredients 
¼ cup all purpose flour 
8 chicken legs 
2 tablespoons olive oil 
1 large onion finely chopped 
1 ¼ cup chicken broth 
2 tablespoons tomato paste 
½ cup kalamata olives 
4 strips orange zest 
Salt to taste

Procedure 
1. Dredge chicken in flour.
2. In large deep skillet heat 1 tablespoon olive oil and saute chicken until brown - about 5 minutes.
3. Remove chicken that has been browned and set aside.
4. In same skillet add remaining oil and cook garlic, and onion stirring frequently until onion is tender about 7 minutes.
5. Add broth, tomato paste, olives and orange zest – bring to a boil
6. Return chicken to skillet. Cover and simmer for 20 minutes.
