PLUM UPSIDE DOWN CAKE
(Makes 6-8 servings)

Ingredients 
12 tablespoons butter 
½ cup packed light brown sugar 
3 plums quarter and slice each quarter in to 4 pieces 
1 cup granulated sugar 
1 tablespoon lemon zest ( one lemon) 
2 large eggs 
1 1/3 cups cake flour 
1 ½ teaspoons baking powder 
¼ teaspoon salt 
¼ teaspoon allspice 
½ cup milk

Procedure 
1. Mix together 4 tablespoons butter and all of the brown sugar until light and creamy. 
2. Spread mixture evenly on bottom of 9 inch cake pan. 
3. Slice plums (total of 16 pieces per plum) and arrange evenly on top of butter and sugar mixture in pan. 
4. In mixing bowl combine remaining 8 tablespoons butter with granulated sugar and lemon zest until light and fluffy. 
5. Add eggs one at a time. 
6. Combine flour, baking powder, salt and allspice. 
7. Add flour mixture to creamed butter mixture in three batches alternating with milk and ending with flour. 
8. Pour batter into the cake pan and spread evenly over the plums. 
9. Bake at 350 degrees until the center is completely baked and golden brown.
