WARM BUTTERSCOTCH PUDDING
(Makes 6 servings)

Ingredients 
3 cups milk 
1 ¼ cup packed light brown sugar 
6 large egg yolks 
1 teaspoon vanilla 
4 tablespoons butter 
3 tablespoons cornstarch 
½ teaspoon salt

Procedure 
1. Combine sugar and milk over medium heat in a sauce pan and wait for milk to just come to a boil. 
2. In a medium bowl whisk egg yolks, cornstarch and salt until smooth. 
3. Slowly add hot milk mixture into egg mixture whisking constantly. 
4. Put all ingredients into sauce pan and stir constantly while cooking for 2 minutes 
5. Remove from heat and add vanilla and butter and whisk until smooth. 
6. Pour pudding into 6 ramekins and cover with plastic wrap. 
7. Chill or eat warm.
