JASMIN RICE 
(Makes 4 servings)

Ingredients
2 cups jasmine rice 
1 ½ cups water to cover 
½ teaspoon lime juice 
Lime zest 
Pinch of salt

Procedure 
1. Bring water to a simmer. 
2. Add a pinch of salt and the rice. 
3. Cook for 10 minutes covered. 
4. Remove from heat and add lime juice and zest.
