CHEESE ROSTI 
(Makes 8 servings)

Ingredients 
2 pound potatoes boiled in their skins 
1 ½ tablespoons butter 
½ cup bacon 
½ cup sliced onion 
2 ounces sliced gruyere cheese

Procedure 
1. Boil potatoes until tender. 
2. Peel and shred potatoes. 
3. Heat butter in skillet and add potatoes, diced bacon and onions and ½ teaspoon salt. 
4. Cook on low flame, when a crust forms turn the rosti and top with sliced cheese. 
5. Bake until cheese has melted. Serve with Bratwurst that has been fried in a skillet until golden brown (about 1 pound)
