FRENCH SALMON IN PARCHMENT
(Makes 8 servings)
Ingredients
8 Salmon fillets
2 tablespoons lemon juice
1 teaspoon coarse salt
¼ teaspoon ground pepper
3 carrots (julienne)
2 zucchini (julienne)
½ nappa cabbage
Procedure
1. Peel and julienne the carrots and julienne the zucchini.Shred the cabbage.
2. Combine lemon juice, salt, pepper, carrots, zucchini and cabbage in mixing bowl.
3. Cut parchment paper into circles 10 inches round.
4. Divide the vegetable mixture between the 8 circles – reserve the liquid that remains in the bowl.
5. Coat the salmon fillets with the liquid from the mixing bowl.
6. Crimp the parchment paper to encase the fish and the vegetables.
7. Cook for 20 minutes in a 450 degree oven.
