SHRIMP PAD THAI 
(Makes 6 servings)

Ingredients 
8 ounces rice stick noodles 
¼ cup tomato based chili sauce 
¼ cup fresh lime juice 
3 tablespoons soy sauce 
2 tablespoons light brown sugar 
4 tablespoons vegetable oil 
4 garlic cloves minced 
2 tablespoons fish sauce 
1 pound peeled, deveined, medium shrimp 
3 cups bean sprouts 
8 scallions, trimmed and halved 
1 large egg lightly beaten

Procedure 
1. Bring large pot of water to a boil. Remove from heat. Stir in pad thai noodles and let soak for 3 minutes until softened but still undercooked.Drain and rinse under cold water. 
2. In a small bowl combine lime juice, chili sauce soy sauce, brown sugar and fish sauce. 
3. In a large skillet heat 2 tablespoons oil over medium heat, add garlic and cook until browned. Add shrimp, cook for 3 minutes until pink. Transfer shrimp to a plate and set aside.
