TILAPIA en PAPILLOTE WITH VEGETABLES
(Makes 4 servings)

Ingredients 
4 large pieces of waxed paper (or parchment paper or aluminum foil)
4 large tilapia filets
1 zucchini, sliced
1 yellow squash, sliced
1 x14-oz. can tomato sauce 
½ bunch basil
8 white mushrooms
salt & pepper
truffle oil (optional)
dash white wine
4 oz. butter, at room temperature

Procedure 
1. Preheat oven to 400?F.
2. Fold waxed paper in half.
3. Brush butter on four outside edges inside waxed paper.
4. Place 2 tbs. tomato sauce on paper.
5. Cover with 2-3 slices of zucchini.
6. Cover zucchini slices with some basil leaves.
7. On top of basil leaves, place 2-3 slices of yellow squash.
8. Place tilapia on top.
9. Add salt & pepper, truffle oil, and a dash of white wine. 
10. Cover with the remaining 1 tablespoon of tomato sauce.
11. Add shredded carrot.
12. Fold outside paper over tilapia.
13. Fold edges on three sides to form a sealed envelope.
14. Bake in oven for 10 minutes.
