BASIC TOMATO SAUCE AND PASTA DOUGH
Ingredients for sauce
3 T. Olive Oil
3 cloves Garlic, lightly smashed
1 (28 oz.) Can Whole Plum tomatoes
Salt and Pepper to Taste
Ingredients for dough
2 C. Flour
Salt
3 Eggs
Procedure for sauce
1. Warm 2 T. of the Oil with the Garlic in a small pot over medium-low heat
2. Cook, stirring occasionally, until the Garlic is lightly golden brown.
3. Crush the Tomatoes with a fork or your hands, and add them, along with their juice, to the pot. Season with Salt and Pepper.
4. Raise the heat slightly, and cook until the tomatoes break down, and the mixture becomes “saucy”. Reduce heat to low and continue cooking until slightly thickened
5. Stir in the remaining Oil , and check for seasoning
Procedure for dough
1. Combine the Flour and a pinch of salt in a Food Processor .Pulse a couple of times
2. Add the Eggs and turn the machine on until the dough begins to clump together
3. Knead the dough on a lightly floured surface until smooth, shiny and elastic
