QUICK SUMMER TOMATO SOUP

Ingredients 
2 cloves Garlic, Crushed 
2 T. Olive Oil (or Butter) 
1 Cup Onion, Minced 
3 Lbs. Tomatoes, cut up 
Salt and Pepper to Taste 
2 (or more) Sprigs Fresh Basil or Dill

Procedure 
1. In a medium sized Saucepot, over medium fire, heat the Olive Oil. 
2. Add the Onion and Garlic. Stir and cook for about 10 minutes, or until the onions become soft and clear 
3. Add the Tomatoes, Season with Salt and Pepper, Cover the Pot, and turn the heat down to Low. Cook, stirring occasionally for 10 more minutes 
4. Put the soup into the Food Processor (or Blender). Add Basil or Dill. Process until Smooth
