ROASTED ZUCCHINI WITH THYME
(Makes 8 servings)

Ingredients 
6 zucchini 
2 onions 
2 tablespoons olive oil 
2 teaspoons dried thyme 
1 teaspoon salt 
¼ teaspoon pepper

Procedure 
1. Cut zucchini into 1 ½ inch chunks. 
2. Thinly slice onion. 
3. Toss zucchini and onions with olive oil, thyme, salt and pepper. 
4. Roast for 30 minutes at 450 degrees.
